Almond Pumpkin Bread

  • 2 cups all purpose flour
  • 1 cup sugar
  • 2 t. baking powder
  • 1/2 cup evaporated milk, undiluted
  • 1/2 t. baking soda
  • 2 T. vegetable oil
  • 1 1/2 t. pumpkin pie spice
  • 1/4 to 1/2 t. almond flavoring
  • 1 t. salt
  • 3/4 cup slivered almonds, tasted, divided
  • 2 eggs, lightly beaten
  • 1 1/4 cups canned pumpkin

Combine flour, baking powder, baking soda, pumpkin pie, spice and salt in medium bowl. Beat eggs, pumpkin, sugar, evaporated milk and oil in large mixer bowl until blended. Add flour mixture and 1/2 cup chopped nuts; mix just until moistened. Pour into greased 9" x 5" loaf pan. Top with remaining nuts. Bake in preheated 350 degree oven for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool for 10 minutes. Remove to wire rack to cool completely.
