American Frittata
Filling dish, perfect for a holiday brunch.
- 4 potatoes, peeled and cubed
- 1/2 onion, sliced
- 1 Tbsp. vegetable oil
- 8 eggs, beaten
- 3/4 cup cubed ham (cooked sausage may be substituted)
- 3/4 cup shredded cheddar cheese
- Salt and pepper to taste
Bring large pot of salted water to a boil. Add potatoes, and cook until tender but still firm. Drain and set aside to cool. Preheat oven to 350 degrees F. In a cast iron skillet, heat oil over medium heat. Add onions and cook slowly. Stir occasionally until onions are soft. Stir in eggs, drained potatoes, ham, salt and pepper. Cook until eggs are firm on the bottom (approx. 5 minutes). Top frittata with shredded cheese and place in preheated oven until cheese is melted and eggs are completely firm (approx. 10 minutes).
