Baked Duck in Orange Juice

  • 4 pounds ready-to-cook duck
  • 1/2 cup flour
  • 1/4 cup shortening or oil
  • 1 small minced onion
  • 1/4 t. ground ginger
  • 1-1/2 t. salt
  • 1-1/3 cup fresh orange juice
  • 1 tsp. grated orange rind
  • 1 T corn starch
  • 1 T water

Preheat oven to 350 degrees. Remove skin from duck and quarter. Coat with flour. Brown on all sides in hot shortening or oil. Place in a casserole dish and add next five ingredients. Cover and bake 1-1/2 hours or until duck is tender. Serve hot with wild rice and sauce. Sauce: Remove duck to serving dish. Blend corn starch and water and add to the liquid left in the casserole dish. Stir and cook until sauce has thickened. Pour sauce over duck and garnish with orange slices and fresh parsley.
