Breakfast Cookies

“This is one of my family’s favorite cookie recipes. I hope you like them, too."  -- Karen Mathis, Auburn

INGREDIENTS:

1 cup margarine, softened

1 cup extra fine sugar

1 cup light brown sugar

2 eggs

1 tsp. vanilla

2 cups plain flour

2 1/2 cups oatmeal, ground into flour

1/2 tsp. salt

1 tsp. baking soda

1 tsp. baking powder

12 oz. white chocolate chips

8 oz. dried cranberries

1 1/2 cups nuts of choice, chopped

 

DIRECTIONS:

Preheat oven to 375 degrees. Cream margarine with sugars. Add eggs and vanilla. Sift dry ingredients and add to mixture. Oatmeal can be ground into flour by pulsing oats in a food processor. Stir in chocolate chips, cranberries and nuts. Roll into balls. Bake on lined pans, two inches apart. Bake in oven for 10 minutes.

Makes about 5 dozen cookies.
