Fresh Strawberry Pie

Summer never tasted sweeter. This quick and fruity dessert is sure to please.

  • 1 qt. strawberries
  • 1 cup sugar
  • 2 Tbsp. cornstarch
  • 2 Tbsp. lemon juice
  • Red food coloring (optional)
  • 1 baked pie shell
  • 1 pint whipping cream

Wash berries and hull (remove stems). Put 1/3 of the berries in a saucepan and crush. Mix sugar and cornstarch and add to crushed berries along with the lemon juice. Cook over medium heat until mixture thickens. Cool. Cut remaining berries into slices and mix with the cooked mixture. Add a few drops of red food coloring, if desired, to the cooked mixture before adding the uncooked berries. Pour the entire mixture into the baked pie shell, and chill completely. Whip the cream and serve pie topped with whipped cream.
