Hot Chicken Salad
Warm up a winter day with this delicious version of chicken salad.
- 2 C cooked chicken breast, diced
- 2 C celery, chopped
- .5 to 1 C pecans, chopped
- 1 C mayonnaise
- .5 tsp. salt
- .5 tsp. pepper
- 3 Tbsp.onions, chopped
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. lemon juice
- 1 C grated cheddar
- .5 cup plain potato chips, crushed
- .5 cup barbecue potato chips, crushed
In a mixing bowl, combine chicken, celery, pecans, mayonnaise, salt, pepper, onion, Worcestershire sauce, lemon juice and cheese. Spoon into a lightly greased 2-quart casserole dish. Sprinkle potato chips over top. Bake for 20 to 25 minutes at 350°.
