Lemon Teacakes

A light dessert perfect for parties or a relaxing cup of tea.

  • 2/3 cup sugar
  • 1 cup softened butter
  • 1 egg
  • 1/2 tsp. salt
  • 1 tsp. vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 small drop of yellow food coloring (optional)
  • 1 1/2 tsp. grated lemon peel

Glaze

  • 1 1/2 cups powdered sugar, sifted
  • 3-4 tbsp. milk
  • 1 to 2 drops yellow food coloring (opt.)

Heat oven to 350 degrees. In large mixer bowl, combine sugar, butter, egg, salt and vanilla extract. Beat at medium speed, scraping bowl, until very light and creamy. By hand, stir in flour until well mixed. Place 3/4 cup of dough in a small bowl and stir in lemon peel and food coloring by hand. Shape flavored dough into 1/2 inch balls (yields 36). Divide remaining dough into 36 pieces. Place one lemon ball in center of each piece of dough and shape into one-inch balls, making sure lemon ball is covered. Place two inches apart on cookie sheets and bake for 15-18 minutes or until edges are lightly browned. Cool completely.

 

In medium bowl, stir together all glaze ingredients. Dip top of each cookie into glaze and let excess drip off. If needed, add a few drops of milk to glaze if it becomes too thick. Garnish with flower candies if desired.
