Poppin' Potato Tomato Soup
1 pound ground beef
4 cups potatoes, cubed
1 small onion, chopped
2 cans (15-ounces each) tomato sauce
3 ½ cups water
2 teaspoons salt
1 ½ teaspoons pepper
1 teaspoon hot pepper sauce
Brown ground beef in a large pot. Drain. On medium heat, add potatoes, onion and tomato sauce. Stir in water, salt, pepper and hot pepper sauce. Bring to a boil.
Reduce heat and simmer one hour or until potatoes are tender and soup has thickened to your taste.
Serve with crackers or enjoy as is.
