- 1 box yellow cake mix
- 1 egg
- 1 tbsp. pumpkin pie spice (adjust according to taste)
- 1/2 tbsp. cinnamon (optional)
- 1 tsp. allspice (optional)
- 1 can pumpkin
- Add as desired: fig pieces, raisins, dried cranberries, walnuts or white chocolate chips
Preheat oven to 350 degrees. Mix all ingredients well. Spoon into greased muffin tins about 3/4 full. Bake 20-23 minutes; test with toothpick to see if done.
For a special treat, top muffins with cream cheese icing.
