Sweet Potato Biscuits

  • 1-1/2 C. sifted flour
  • 3 T. butter or shortening
  • 1-1/2 t. baking powder
  • 1/2 cup cold mashed sweet potatoes
  • 1/2 t. salt
  • 6 T. milk

Sift together the dry ingredients, work in the butter or shortening, and cut in the sweet potatoes. Moisten with milk, using only enough to form a soft tender dough. Turn onto a slightly floured board, knead until just smooth, and roll 1/2" thick. Cut into 1 to 1-1/2" biscuits. Bake in preheated oven at 450 degrees until brown.

Makes about 1 dozen
