Zesty Greek Salad
- 1 head of Romaine lettuce (rinsed, dried and chopped)
- 3 cucumbers, seeded and sliced
- 1 1/2 cups crumbled feta cheese
- 1 cup Kalamata olives, pitted and sliced
- 3 cups diced Roma tomatoes
- 1/2 red onion, sliced
- 1 teaspoon dried oregano
- 1 lemon (juiced)
- 6 tablespoons olive oil
- Salt and pepper to taste
In a large bowl, combine lettuce, cucumbers, tomatoes, onion, Kalamata olives and feta cheese. In a small bowl, whisk together the olive oil, oregano, lemon juice, salt and black pepper. Pour dressing over salad, toss and serve.
